A Hunter’s Feast:

Rustic Wild Goose Stew

As the autumn air turns crisp and the leaves don their fiery hues, hunters across the country gear up for the goose hunting season. There's a unique satisfaction that comes from cooking what you've harvested, and this Wild Goose Stew recipe is a perfect celebration of the hunt.

Ingredients

  • 4 goose breasts
  • A pack of bacon cubes
  • Fresh vegetables, like carrots, red onions, spring onions and leeks
  • 1 clove garlic
  • 2 tbsp flavorless oil
  • 1 tbsp tomato puree
  • 1/2 l cream
  • 4 dl water
  • 1 chicken bouillon cube
  • 3 dl apple juice – for a hint of sweetness
  • 1 tsp ground paprika
  • Salt and pepper, to taste

Instructions for the sauce

Begin by prepping the vegetables. Wash, peel and cut the carrots, onions and leeks into cubes and small pieces.

Cut the goose breasts into small pieces.

In a pan, heat some oil and roast the paprika.

Add garlic and bacon, followed by the goose - but don't let it burn...add the onions and leeks.

Stir in the carrots, tomato puree and add water. When mixed, add the chicken stock. Simmer for 20 minutes.

Add the apple juice and bring everything to a boil. Add the cream and remove from heat. You will see a nice, orange color.

Season to taste with salt and pepper.

Bring it all together

Serve with cooked macaroni, rice or another pasta of your choice. Bon appétit!
